Breakfast Dinner


Breakfast Casserole

3 Croissants
1 package of turkey bacon cooked and crumbled
6 eggs, beaten
2 cups milk
1 tsp. salt
1 tsp. dried mustard
1 cup shredded cheddar

Preheat oven to 350 degrees. Rip apart croissants and line bottom of 9x13 baking dish (Pyrex). Mix all other ingredients together in a mixing bowl, and pour over croissants. Cover and refrigerate overnight, or bake when ready. Bake uncovered for 45 minutes.

Happy Birthday, Sean!

We're celebrating someone very special's birthday today!!!! It's my oldest... most peanutty... best goalie ever... great student... wonderful big brother to Conor... and most of all ~ a blessing from above, Sean's special day. He's 12! I can't believe how quickly these last 12 years have flown by. Could it possibly be a result of the joy that envelopes motherhood? I'd like to think so. Sean's birthday is a constant reminder of the wonderful gifts God bestowes upon us. Jim and I wanted a child more than anything, and it took many years for our prayers to be answered. The Lord was always listening - even when the words were merely cries within my heart. He knows our inner-most thoughts before we can even think them. "I knew you before I formed you in your mother's womb." Jeremiah 1:5 I'm so grateful for a loving Father that has blessed me with the desires of my heart. Sean, you're a blessing, and I'm so glad you're my son. Happy Birthday, P! I love you.
